
Cream of Black Cabbage Soup

THE INGREDIENTS:
- For 4 servings
- 600g red cabbage
- 2 potatoes
- 1 onion
- 800ml of water
- Oil, salt, pepper to taste
PREPARATION:
- Peel the potatoes, chop the onion and clean the cabbage, removing the outer leaves and the larger ribs, then cut it into slices.
COOKING:
- In a pan with 20ml of oil, fry the onion and potatoes for about 4 minutes.
- Add the cabbage and mix.
- Pour in the water and cook for 50 minutes, until soft.
- Using an immersion blender, puree the mixture until smooth.
- Season with salt and pepper to taste.
