Cream of Black Cabbage Soup

THE INGREDIENTS:

  • For 4 servings
  • 600g red cabbage
  • 2 potatoes
  • 1 onion
  • 800ml of water
  • Oil, salt, pepper to taste

PREPARATION:

  • Peel the potatoes, chop the onion and clean the cabbage, removing the outer leaves and the larger ribs, then cut it into slices.

COOKING:

  • In a pan with 20ml of oil, fry the onion and potatoes for about 4 minutes.
  • Add the cabbage and mix.
  • Pour in the water and cook for 50 minutes, until soft.
  • Using an immersion blender, puree the mixture until smooth.
  • Season with salt and pepper to taste.
