Seafood risotto

Seafood risotto is a traditional Italian dish, rich in seafood flavors and Mediterranean aromas. Preparing it is an experience that delights the palate and brings all the flavor of seafood to the table. 

Ingredients:

  • 320g Carnaroli or Arborio rice
  • 400g mixed seafood (mussels, clams, shrimp, squid, etc.)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 200ml of dry white wine
  • 1 liter of fish or vegetable broth
  • 4 tablespoons of extra virgin olive oil
  • Chopped fresh parsley
  • Salt and pepper to taste

Preparation:

  • Clean the seafood thoroughly under cold running water to remove any sand residue.
  • In a large pan, heat two tablespoons of extra virgin olive oil and sauté the onion and garlic until golden.
  • Add the seafood and sauté over high heat for a few minutes until it opens.
  • Once opened, remove the shellfish from their shells and set aside. Strain the released liquid and reserve it for the broth.
  • In a saucepan, bring the fish or vegetable stock to a boil and keep warm over low heat.
  • In another pan, pour two tablespoons of extra virgin olive oil and add the rice, toasting it for a couple of minutes over medium heat.
  • Blend the rice with the white wine and let the alcohol evaporate.
  • Gradually add the hot broth to the rice, one ladle at a time, stirring constantly and adding more only when the previous one has been absorbed.
  • Continue cooking for about 15-18 minutes, until the rice is al dente and the consistency is creamy.
  • Add the previously sautéed seafood and the strained liquid.
  • Season with salt and pepper and continue stirring to combine all the ingredients well.
  • Finish cooking by adding the chopped fresh parsley and mixing gently.

Plating:

Serve the seafood risotto piping hot, garnishing each plate with a drizzle of extra virgin olive oil and a sprinkling of fresh parsley.
