Blackberry tart
On Cake Day, what's better than a blackberry tart, lovingly prepared and baked to perfection using Pietrella pans? This tart, with its crumbly crust and rich fresh raspberry filling, will be a triumph of sweetness and flavor.
Ingredients for the base:
- 200g of 00 flour
- 100g cold butter, cut into cubes
- 80g of icing sugar
- 1 whole egg
- Grated zest of 1 lemon
- A pinch of salt
Ingredients for the filling:
- 300g of fresh blackberries
- 50g of sugar
- Juice of half a lemon
- 2 tablespoons cornstarch
Preparing the base:
- In a bowl, mix the sifted flour with the icing sugar, the grated lemon zest, and a pinch of salt.
- Add the cold butter cut into cubes and work it quickly with your fingers until the mixture becomes sandy.
- Add the lightly beaten egg and knead quickly until a smooth dough forms.
- Wrap the dough in cling film and leave it to rest in the refrigerator for at least 30 minutes.
Preparation of the filling:
- In a Pietrella pan, place the fresh blackberries with the sugar and lemon juice.
- Cook over medium-low heat for about 5-7 minutes, until the blackberries have softened and released some of their juice.
- Add the cornstarch and mix well, continuing to cook for another 2-3 minutes until the filling has thickened slightly.
- Turn off the heat and let it cool completely.
Assembly and cooking:
- Preheat oven to 180°C.
- Remove the shortcrust pastry from the refrigerator and roll it out on a lightly floured surface, forming a disk about 5 mm thick.
- Line a previously buttered cake pan with the shortcrust pastry, taking care to remove any excess pastry from the edges.
- Prick the bottom of the pastry with a fork and pour the blackberry filling inside, distributing it evenly.
- Decorate the surface with intertwined strips of shortcrust pastry or as desired.
- Bake the tart for about 30-35 minutes, until the surface is golden.
- Once cooked, remove the tart from the oven and let it cool completely before serving.
Plating:
Serve the tart on an elegant dessert plate, perhaps accompanied by a dusting of icing sugar and a few fresh raspberries for an attractive presentation.
