
Cauliflower and Sausage Pasta

Ingredients:
- For two servings:
- 200g sausage
- 300g cauliflower
- 150g of pasta
- 2 cloves of garlic
- Oil, salt, chili pepper, thyme, rosemary to taste
- Half a glass of red or white wine
- Pecorino Romano
Preparation:

Boil the cauliflower in salted water, drain when al dente and reserve the water.

In a pan, heat a drizzle of oil, add garlic, and your desired spices. Sauté the crumbled sausage over low heat and deglaze with the wine. Once the wine has evaporated, add the cauliflower, two ladles of the cooking water, and cook for 10 minutes.

Continue cooking the pasta in the same water used for the cauliflower. With 3 minutes left, drain the pasta, add it to the sauce, and toss. Turn off the heat, grate the pecorino romano, and serve!
