The Genoese

Genovese is a traditional Neapolitan dish, rich in flavor and aroma. Thanks to Pietrella cookware, you can create a Genovese with a rich, irresistible taste.

Ingredients:

  • 1.5 kg of white onions
  • 800g beef (cut into pieces)
  • 200g smoked bacon
  • 100g of grated cheese
  • 1 liter of vegetable broth
  • Olive oil
  • Salt and pepper to taste

Preparation:

  • Finely slice the onions and dice the bacon.
  • In a Pietrella saucepan, heat some olive oil and add the pancetta. Sauté until crispy.
  • Add the onions and sauté over low heat for about 30 minutes, stirring occasionally.
  • Add the beef and sauté for a few minutes until golden brown on all sides.
  • Pour in the hot vegetable stock, cover with a lid, and cook over low heat for at least 2 hours, until the meat is tender and the onions have turned into a thick, creamy sauce.
  • Season with salt and pepper and sprinkle with grated cheese before serving.

Cooking:

Cooking takes place over low heat in the Pietrella pot for at least 2 hours.

Impact:

Serve the Genovese hot with a portion of fresh pasta or a slice of rustic bread. Finish the dish with a sprinkling of grated cheese and a twist of freshly ground black pepper.
