THE INGREDIENTS:

  • 650g courgettes
  • 100g red onions
  • 3 eggs
  • 30g grated cheese
  • 15g breadcrumbs
  • 120g provola cheese, sliced

Preparation 

  • Cut the courgettes into thin slices and finely chop the red onion. 
  • Combine the courgettes and onion in a bowl and season with a drizzle of oil, a pinch of salt, and a grind of pepper. 
  • Mix everything gently to distribute the aromas.
  • Prepare a baking tray lined with baking paper.
  • Transfer the seasoned courgettes to the baking sheet and level them to create an even layer. 
  • Place everything in a preheated oven at 180°C and bake for about 15 minutes. This will make the zucchini tender and lightly browned.
  • Once cooked, transfer the zucchini to a bowl. Add the beaten eggs and mix thoroughly. 
  • Now it's time to enrich your omelette with grated cheese and breadcrumbs.
  • Continue mixing until you obtain a smooth and tasty mixture.
  • Take a slightly larger baking pan, line it with baking paper again and spread half of the courgettes on the bottom, creating an even layer. 
  • Arrange the provola slices on top of the courgettes, distributing them evenly over the entire surface. 
  • Finally, pour the remaining courgettes over the provola, creating a raised layer of flavour.

Now it's time to bring your zucchini and provolone omelette to life. 

Bake the pan at 200°C and leave to cook for about 35 minutes, until the surface is golden and crispy. 

Remove from the oven with care and let yourself be enveloped by the irresistible aromas that will spread throughout the kitchen.
