Cous Cous with Zucchini and Chickpeas

Ingredients:

  • For one serving:
    • 50g of couscous
    • 50ml of hot water
    • 150g of courgettes
    • 70g of pre-cooked chickpeas

Preparation:

  1. Dice the zucchini and sauté them in a wok until evenly cooked and crispy. In the same pan, sauté the pre-cooked chickpeas.

  2. Place the hot water and couscous in a bowl, add a tablespoon of extra virgin olive oil, salt, and spices. Let the couscous rest for 5 minutes until it has absorbed all the water.

  3. Add the courgettes and chickpeas to the couscous, mix, and drizzle with oil.
