Broccoli Fritters Recipe

Ingredients :
  • 400 g of broccoli
  • 2 eggs
  • 2 tablespoons of flour
  • 3 tablespoons of Parmesan cheese
  • Salt and pepper to taste
  • Extra virgin olive oil
Procedure:
  1. Start by cutting the broccoli into florets and blanching them in salted water for about 15 minutes, until tender. Drain and blend until creamy.
  2. In a bowl, combine the broccoli cream with the Parmesan cheese, flour, whole eggs, salt, and pepper. Mix all the ingredients until you obtain a smooth, compact mixture.
  3. In a nonstick pan, heat a drizzle of extra virgin olive oil. Using a spoon, scoop out a small amount of batter and pour it into the pan, pressing it down lightly with the back of the spoon to form fritters. Repeat until all the batter is used.
  4. Cook the fritters for about 3 minutes per side, until golden and crispy. Serve hot or warm, accompanied by a fresh salad or yogurt sauce.

  3. Serve them hot or warm, depending on your taste.
