Neapolitan pizza

Today we're talking about Neapolitan pizza, a culinary icon loved by everyone.  In this edition of the " Pietrella In Cucina - Napoli Edition " column, we offer you the super traditional and delicious recipe for homemade pizza. 

Follow the instructions step by step to get the perfect dough and enjoy the aroma and flavor of a real Neapolitan pizza fresh from the oven. Whether you prefer a classic Margherita or a custom combination of ingredients, this recipe will guide you to culinary success. 

Ingredients: (for 6 loaves)

  • 800 g of 00 flour
  • 500 g of water
  • 2 g of fresh brewer's yeast
  • 25 g of salt
  • 10 g of sugar
  • 25 g of extra virgin olive oil

Dough Preparation: 

  1. In a bowl, place 400 g of flour and add the crumbled brewer's yeast.
  2. In another bowl, dissolve the salt in the water and pour it into the flour. Begin kneading.
  3. After 1 minute, add the sugar and continue kneading until it is absorbed.
  4. Gradually add the rest of the flour and continue kneading for 10 minutes.
  5. Add the extra virgin olive oil to the dough and knead for another 10 minutes until the dough is elastic and smooth.

Preparation of the Loaves:

  1. Turn the dough out onto a floured surface and knead for another 10 minutes, until soft and elastic.
  2. Place the dough in a previously greased glass bowl, cover it with a cloth and let it rise for 30 minutes.
  3. After the first rising, take the dough and shape it into a loaf.
  4. Divide the loaf into about 6 pieces and shape into balls.
  5. Place the balls in a warm place, covered with a cloth, and let them rise for about 6-8 hours, until they have doubled in volume.

Cooking :

  1. Preheat the oven to maximum temperature.
  2. Spread the prepared pizzas in a lasagne pan or on a pizza pan.
  3. Top the pizzas as you like with your favorite ingredients.
  4. Bake the pizzas in a hot oven and let them cook until the surface is golden and the cheese is melted.
  5. Take the pizzas out of the oven, cut them into slices and enjoy them hot.
